BBQ Tricks and Tips
Cooking on a Small BBQ Grill with Indirect Heat
A good trick if up have a small BBQ grill without a fire box and you want to cook with Indirect Heat.
Try to line the charcoal up in an "S" shape and start your coals at one end thus creating a smoker
effect on your small grill. Then place your meat at the other end of your coals. When the coals in
the "S" shape burn down the line half way on the "S" move your meat to the other side.
Be sure to place some Mesquite or Pecan Chunks along the way.
Got a New BBQ Pit
A new BBQ pit should be cured like a new iron skillet. You can rub the inside of your pit with Pam,
peanut oil, cooking oils, or even bacon grease left over from cooked bacon. Then Fire Up the pit with
a medium fire, 225 degrees is good. If you have a Smoker Choke the smokestack control to 1/2 and
let it smoke heavily. A hour or two is good, the longer the better.
Then your BBQ Pit will be cured and ready to use.
BBQ Hamburgers
When BBQ'N Hamburgers, poke a hole in the center of the burger. This will stop the hamburger
from rising in the center and your burger will be more evenly cooked; not burnt on the
edge and only medium in the middle. The hole will close while cooking.
Marinating
When marinating meats, use large Zip Lock plastic bags. It will coat the meat more easily.
Chopping Boards
Always use Separate Chopping Boards and Utensils for handling Raw and Cooked Foods to
Prevent Cross Contamination
Use Long Handled Tools
Always use long handled tools, such as tongs, for handling the food. Do not use the same tools for
handling raw and then cooked foods.
Sweet Corn
Cooked on the BBQ Grill and then Rubbed in Chili Powder is for the brave Only
Sweet Potatoes
Make a hollow in the center of a sweet potatoe fill it with chili-con-carne, wrap in foil and
place on Grill Texas Delicious.
BABY BACK RIBS
WE HAVE FOUND THAT IF WE PRE-COOK BABY BACK RIBS IN A PRESSURE COOKER WITH A
LITTLE BBQ SAUCE IN THE WATER BEFORE WE PUT THEM ON THE GRILL, THEY ARE MUCH
MORE TENDER AND DOESN'T TAKE AS LONG TO BBQ AND WITH THE MESQUITE WOOD CHIPS
THEY ARE MOUTH WATERING. GARY  NC
Jalapeno Peppers
Always take extra precautions when you are slicing and dicing fresh Jalapeno Peppers. The invisible oil of
the pepper can sear delicate skin, so to avoid disaster, be sure to wear gloves and thoroughly clean any surface
the pepper touches. Tip on how to get hot pepper acid off of your hands. Try Peanut Butter

Groom Your Grill Grate after You Use It:
Use a wire brush to loosen the stuck-on food particles, then wash it with hot soapy water
and Rinse. When you're ready to BBQ the next time, Rub the Grate with Canola oil or spray it with a
Non-Stick Cooking Spray to prevent Your food from Sticking. Sam WA

Tips on how to clean your BBQ Grill
(1) Add 1 cup of water and four tea spoons of Baking Soda mix well. Then take a wire brush and dip it into the mixture
and brush it on your grill. No wire brush then ball up some tinfoil dip the foil into the mixture and brush your grill.
(2)  Just after you take your BBQ of your grill spread a sheet of  tinfoil with the shiny side down over the
entire cooking grill and close the lid.
(3) After cleaning the grill and before you cook, rub a light coat of oil on the grill, to prevent sticking
(vegetable oil works fine). I pour a small amount on a paper towel and rub the grill.

A Summer Safety Grilling Tip
Be careful with the tongs or barbque utensils you use on your barbecue when grilling fish,
chicken and meat together on your grill. Use separate utensils for safety.

Thaw fish fillets in milk in the refrigerator.
The milk absorbs the fishy flavor and adds a "fresh caught" taste.

When preparing fish on the grill
Use a flat spatula instead of tongs when turning the fish. You will  have greater success keeping the fish from
falling apart and you won't drain the flavor-rich juices onto the coals.
